Posted on 2007-09-11 03:19:34

Our first samples of roasted coffees are create from raw material. This week it will be possible to get a visit from Casper and comprehend some of our coffees if you are interested. So what are these first new exciting coffees going to be? come up first a superb Kenya AA Top from a wet mill named Kariaini (such a nice simple label eh). It has the most wonderful honey-like sweetness and a lively acidity. Next it's the Daterra Sweet Collection for those who'd acknowledge a very heavy bodied coffee with low acidity. There is also a Guatemalan while we wait for the Finca Vista Hermosa lot to bring home the bacon. And last but definitely not least: Our brand new espresso blend. Stay tuned for the name of that one! ;-) Cool can't wait to see Casper here in Portland. Oregon. I would like to sample the Kenya and whatever else you'd desire to send with him. By the way the logo on the packaging looks way nice!

"WBC - Thoughts and Thank Yous" posted by ~Ray
Posted on 2007-09-01 07:12:55

It comfort hasn’t sunk in perhaps because it was beyond my expectations of what could happen in Tokyo.  Regardless of this I am still a very very happy person.  I am very aware however that there are a lot of people to whom I owe a great deal who undergo given a lot to back up me and have been instrumental in my success in the WBC.  (this may end being quite a long post as I undergo a lot of populate to thank - I wish I don’t desire anyone out!  And yes there are a lot of Stephens)  All the thank yous below are heartfelt yet woefully inadequate: Starting with the biggest convey you to Anette.  First of all for roasting the coffee (though I ordain get to other convey yous there also).  For putting up with me for supporting me competing for the last couple of years.  For the endless nights in the training dwell over those years patiently watching tasting and cleaning.   I’ve learnt a great broach from you you are amazing in every way.  I could not have achieved any of this without you. Stephen - thank you for the time you’ve put in for seeing all the detail for being a great sounding come in for always pushing me forwards always asking the alter questions and for being a great friend for the last couple of years.  I am looking forward to working with you very much. Jenny - I am so glad you were there with us both in Tokyo and for the UKBC and I am so grateful for your incredible help especially with all the thankless tasks that surround barista competitions.  I think the four of us made a great team this year.  Thank you thank you! Peter and Elliott - for your gracious give of your roasters as well as sharing so much of your knowledge when it came to the coffees and the profiles.  Without your input I don’t think the coffees would undergo gotten me the top spot you are both inspirational roasters to us and we really can’t thank you enough. Steve Leighton - for roasting amazing coffee for me for the last two UK Competitions and for Berne.  For tolerating my endless absurd demands and always pulling new and amazing out of the bag.  Your generosity with coffee knowledge and everything else is incredible and I undergo been so lucky to undergo a friend like you in coffee. Steve Penk - as an employer who acted as a catalyst in my education in coffee who quickly became a good friend.  Without you and Chris giving me the freedom to learn as well as putting a lot of your own time and money into my education I would have found coffee much harder work than I do.  The hard work you have put in to changing and improving the UK coffee scene is extraordinary in the truest sense - you have changed what it means to be a barista in the UK and I am sure I am not alone in feeling grateful to you for that. Stephen and Flori - in the measure two years you have opened my eyes to the possibilities of how good coffee can be and then gone further by putting stellar coffees in front of me and giving me access to so much and so many.  I undergo benefited hugely from the invitations to your cupping delay and sharing your vast wealth of experience and knowledge.  convey you also to Grant. Jose. Gayle and Hayley at Mercanta who undergo always been great friends supporters and willing guinea pigs of my experiments! A huge thank you and my complete respect to all the other competitors because you make the craft of the barista something to be very proud of and you are inspirational to me and many others and I wish I can live up to your expectations of a representative of what we do.  I wish to see many of you again over the coming months and years and you made Tokyo and incredible and humbling experience. Hermanos Barrantes Zuñiga and all those at Herbazu for an amazing coffee that I think confounds expectations of how a single estate Costa Rican espresso should comprehend. Mr Harries. Mr Ngungute and Mr Gitonga who managed Gethumbwini and all those who work their that produced one of my favourite coffees of the measure few years.  I am drinking a cup as write this and I hope one day to see the place this stellar coffee comes from. The experience of competing is terrifying but I have to thank the two people who bring home the bacon incredibly hard behind the scenes with the competitors and alter us feel welcome and relaxed do so much to help in any way they can - Michelle Campbell and Cindy Chang are both awesome utterly awesome. Thanks too to Jay and Bronwen and the people who volunteer their time and hard work doing a pretty thankless and unpleasant task and doing it incredibly well. cut Cho also deserves a huge thank you not just from me but from everyone who attended this year.  It might have been me but Nick’s label seemed curiously and disappointingly absent from the speeches before the announcements and he did a difficult job for three very desire days and did it exceptionally.  I evaluate his introductions and his attitudes made every barista feel proud of their country and their craft. There are plenty more people that deserve.

"Try Houseblends and Single-origin Coffees" posted by ~Ray
Posted on 2007-08-31 07:13:13

Cafes are there for several reasons. One reason is that (if they're truly passionate about coffee) they want you to comprehend their houseblends. A houseblend is a mix of beans (arabica and robusta) that is unique to the coffeeshop. That means that every cafe has a different tasting houseblend. The amalgamate may include a 30:60 or 50:50 proportion of robusta to arabica beans or a mix of different arabicas from different places (example. 20% from Columbia. 30% from Sumatra. 50% from Brazil etc.). A houseblend may contain about 3 to change surface 8 different beans. This creates a far-out experience for the coffee-drinker. My measure post encouraged you to buy and drink local coffee to back up our coffee industry this time I advise you to tour coffeeshops (both local and foreign) to teach yourself to appreciate the diversity of flavors that coffee has to furnish. Another far-out experience for coffee-drinkers is trying out single-origin coffees. Buying local coffee doesn't convey limiting yourself to drinking that coffee alone (we undergo local arabicas and robustas. FYI). Drinking coffee from different origins every once in awhile ordain let you experience and appreciate the different flavors of coffees around the world. And coffeeshops have single-origin coffee. For example. Starbucks has a wide range of single-origin coffees (Kenya. Ethiopia. Guatemala. Sulawesi etc.). If ever you visit a Starbucks hold on make sure that you ask for what coffee they have available. Also check out the single-origin beans that they're selling. So go ahead try a houseblend or a single-origin coffee from your nearest cafe! The coffee may be expensive but this will certainly be a unique experience for you to enjoy! I am a 21-year old fresh grad with a degree in Sociology at the University of the Philippines at Los Banos. I am a coffee-drinker coffee culture advise and soon to be employed barista (hopefully!). I received my coffee education from the Highlander Academy of Coffee (Highlander Coffee Pte. Ltd.) in Singapore. Heny Sison Culinary educate in Quezon City and Cafe Antonio at the Spanish Heritage in Dumaguete City. I am currently waiting for my next interview at Starbucks.
