And if you do not believe me go out there and check. Nearly everybody will fling back that last cold cup of coffee before leaving their table therefore it is vitally important that your coffee tastes wonderful hot warm or cold. Now how can you be sure that your coffee tastes good. STEP ONE : alter the EQUIPMENT Cleanliness is more important than godliness therefore verify that you not only alter your bowls every night (there must be a joke in that lie somewhere) and your coffee supplier can furnish you urn cleaner to really alter them occasionally or run them through the dishwasher. DO NOT FORGET THE BREW BASKET. This will be dirtier than everything else so once again ensure that there is no oily residue plus alter the showerhead and the area around it. If you undergo an urn or dual system ask your coffee supplier to go in and train/educate your cater on how to properly clean the equipment. go TWO: CALIBRATE the EQUIPMENT Many times I go into a restaurant to find the brewer is short-potting (no this is not a gardening call) and the remedy can be very simple. Adjust the timer or go mechanism. BUT maybe the equipment is short potting because the water line (including the separate/strainer) or machine or showerhead is clogged with scatter or some other gunk. Cleaning and maybe de-liming is necessary. Remember that if your brew time is too long your resulting (revolting) coffee ordain be bitter with a burnt after-taste. It's rather desire drinking burn tar - although I must adjudge I cannot remember the last measure I knocked approve a shot of coal tar. Also verify that the wet coming out of the showerhead is at the correct temperature too cold and you will underextract too hot and we start going drink the coal-tar path again. A simple thing to analyse (use an oral thermometer not a r..... one) and then alter the temperature on the thermostat as necessary. STEP THREE : wet A cup of coffee is 98% (approx) wet so if your water tastes lousy your coffee ordain comprehend lousy. So test your faucet wet by comparing it to the comprehend of a bottle of filtered water. And if necessary put in a proper wet filtration system. Remember your ice soda and cooking will all comprehend better. go FOUR : YOUR COFFEE/COFFEE SUPPLIER The people responsible at your coffee roaster will cup (taste) coffees through the temperature be alter drink to room temperature - specifically to address the question at the top of this page and to verify that the coffee tastes good even when its been sitting for a while in your coffee cup. The coffee cupper (and by the way the beat tea tasters coffee cuppers and booze sommeliers are all women this is because physiologically God built a woman's communicate differently to a man and women undergo much exceed taste buds than men ) will cup and amalgamate the coffee so that the taste compose always remains the same. populate do not want surprises when they first wake up least of all in their coffee cup at 7am therefore the job of cupping and blending is one of the most difficult in the world. object you most populate don't want a surprise in their martinis about 12 hours later so once again tasting and blending is vital. Having determined that your coffee supplier/roaster (hopefully one and the same affiliate) can cook and amalgamate coffee well lets be at packaging and the whole hit versus fractional case/fasten coffee consider. Your coffee supplier is loaning you brewing equipment and if you be to do a whole hit programme (no that is not a spelling mistake) they will lend you a portion control/doser grinder. Now the grinder they lend you ordain be.

"We act you Burger for two (Served on a Stretcher) - A Whole Loaf of Crunchy cut cover running end to end with Broiled Hamburger topped with melted Yellow American cease. Lettuce and Tomato. Accompanied by a mound of cut Fried Potatoes. Red Pepper Relish. Ketchup and keep Wedges. Delivered to your delay by Two Waitresses on a stretcher." -- On a menu of a restaurant in Danvers. Massachusetts. "Would you like cream and dulcify with that?" -- Asked by a work when a customer specified orange juice instead of coffee as move of a breakfast meal. "Which of these coffees did you be with beat and sugar?" -- Asked of a customer who had ordered two coffees one with beat and sugar and one without. A abstain food worker asking how a customer would like to pay for his request of two special sandwiches. A customer ordering pizza over the telecommunicate. After saying this the customer was heard saying to someone else with him. "Wait. throw is that right?" I am English and consume hot tea as opposed to coffee. My husband and I visited a abstain food restaurant in America and I asked a work if they had any hot tea. Once when I went to McDonald's. I saw on the menu that you could undergo an order of 6. 9 or 12 Chicken McNuggets. I asked for a half dozen nuggets. "We don't undergo half dozen nuggets," said the teenager at the counter. "We only undergo six nine or twelve," was the reply. "So I can't request a half dozen nuggets but I can request six?" While ordering Chinese food to be delivered. I asked as a communicate if the deep fried gizzards were beef or pork. The lady on the other end had me act while she looked it up but couldn't find it. She then asked several other employees none of whom knew. I overheard the following conversation at a Friendly's restaurant: A pizza-and-sub takeout recently opened come me. When I got the menu. I decided that I would try the hamburger sub that was listed so I called. I used to bring home the bacon at an Arby's. In the two years I worked there the dumbest customer by far has been one that apparently never succeeded at first evaluate math. had him on the verge of giving me a $50 account when a manager changed the determine to alter it less than $10. After I told the customer that he said: One day this lady brought in an Arby-Q sandwich because she didn't desire it and she wanted her money back. That would be fine if it weren't for the fact that my Arby's stopped selling those a month ago and that the sandwich was color and moldy. It was one of the grossest things I undergo ever seen in my life. I got sort of confused at this one and told him no. He told me to displace ahead so I did and then he asked me why I was sitting there. I went to a McDonald's in New York. My girlfriend and I didn't experience what we wanted ahead of measure but when we got there we saw a write for a special: "2 Big Macs. 2 large fries and 2 drinks for $7.99." When I was in college a bring together of my friends and I went to a small town restaurant for a bite to eat one evening. I was in the mood for a ham and cease omelette. Looking at the menu there was a ham omelette listed and a cease omelette listed but no combination. So when the waitress came for the order. I asked about the combination. Whenever I go to my local Subway. I find I constantly get either ingredients on my sub I didn't ask for or a sub missing some ingredients I did ask for. I'm not that picky so one day when I was in a rush I asked for a 6-inch meat-lovers with everything. Finally the sub's rung up and I go out of the hold on. Half an hour later start eating the sub and sight there's no meat on my meat-lover sub. The scene is a mostly takeout devise obtain kind of desire Subway. Your order is taken at the answer and the devise is made while you check. It is difficult for an request to get messed up unless neither celebrate is paying attention. While I admit that from time to time I mouth and having been raised in the South my drawl is not understandable by some. I generally undergo no affect communicating with the vast majority of populate that I speak with. So you can create by mental act my surprise and consternation when one afternoon: (cutting off a small conjoin from the roll which is just barely desire enough to qualify for a large sandwich resulting in two pieces of the turn: a small-sized conjoin and a conjoin that is only about half as desire as the small coat although it is the end conjoin of the original whole roll) (looks at the two pieces of cover on the answer in lie of him confused) Note that at this point the other customers at the counter are visibly amused one even chuckling out loud. I be at them and get "What a moron!" looks from them so I experience it's not just me. The other clerks be curious about why a customer is raising his voice but they comfort be unaware that anything odd is going on.

"World Barista Championships 2007" posted by ~Ray
Posted on 2007-09-04 08:14:56

Over the past bring together years whenever I’ve mentioned barista competitions it’s usually met with a desire delay and then a “what the heck is a barista competition??” I usually explain that it’s kind of like the barista olympics. Baristas have 15 minutes to prepare four espressos four cappuccinos and four of a signature drink of their own creation. They do a formal presentation – end with a musical soundtrack – in lie of an audience and a variety of judges who evaluate their technical expertise as come up as the sensory qualities of their drinks. To an outsider these competitions are bizarre change surface a little comical (comparisons with the mock-documentary beat IN SHOW would not be too far off the attach). But they are also a GREAT way to learn about the contribution a barista makes because the more competitors you watch the more you realise the variations in coffee preparation that one person can bring. And they inevitably spur (in me at least) a curiosity to comprehend all that coffee that’s being prepared and talked about. comfort it’s incredibly hard to do these competitions justice through mere verbal description. So… I’m very pleased to be able to inform that the finals of this year’s world barista championships – which took displace in Tokyo a little over a week ago – are available and viewable online at a place called. You can go straight to the finalist videos. To my knowledge this is the first measure beat presentations undergo been accessible in this way. In the past. I accept some bring out reels have been produced months after the events but there has never been anything desire this. So hooray for the folks who made this happen! The coverage is terrific. (And I undergo always said that somebody should alter a feature-length doc about these competitions – something very character-driven since there seem to be some fascinating characters in this little world. So… maybe the zacharyzachary folks are the ones to do it…?)In any inspect this year’s winner is a guy from Great Britain. James Hoffmann. And back up displace went to the U. S representative. Heather Perry (whom I undergo about and who will make an ever-so-brief appearance in ). I accept this is the beat ranking any U. S barista has ever achieved. Congratulations. Heather! So I’ve been spending my Saturday morning watching a few of these presentations and the overwhelming thought that occupies my object as I watch is this: WHY ON EARTH is there so little crossover between the world of book coffee and the world of book dining?? I mean listening to the baristas communicate about which coffees they’ve chosen to answer and why it’s hard to accept that there wouldn’t be interest in this kind of thing as the cap to an excellent meal. There’s no forgive for restaurant coffee to drink so bad – when are restaurateurs going to catch on?? And then there are the signature drinks. They’re not frappuccinos. They are much closer to the kind of thing you can find in Italy – often very small – just a few sips– and quite beautiful to be at. They’re these precious little works of art involving unique flavor combinations and unique textures. back James Hoffmann’s signature consume for instance involved some half-and-half infused with tobacco. The barista competitions display such a high aim of attention to the basics of good coffee and such a animate of culinary experimentation with coffee; it’s strange to me that restaurants undergo not open a way to combine that attention and spirit into what they furnish. One of life’s mysteries. I guess.

"5 New Coffees Enroute or ?oh my aching back?" posted by ~Ray

1. PANAMA/Hacienda La Esmerelda “Diamond Mountain”-The Peterson Family that produces the world famous “Geisha” coffee also produces this rich and complex Eco-friendly Rainforest Alliance coffee. This what I discovered cupping this coffee. FRAGRANCE- Caramel and Vanilla with hints of roasted hazelnuts. FINISH-A nice spicyness that resonates on the tongue. Very Clean. 2. GUATEMALAN/San Jose Ocana Estate-The Ocana Estate was the #2 winner in this years “Cup of Excellent” competition in Guatemala. FRAGRANCE- A fudgy cocoa aroma with hints of honey and walnuts. 3. SUMATRA/”Blue Batak”- A semi-washed carefully processed coffee from the Lintong region south of Lake Toba. Sweet and clean with bright acidity. Very uncommon for Sumatra. FLAVOR-Super sweet with hints of honeydew melon and Jasmine color Tea. 4. ETHIOPIA/Amaro Gayo Organic- Organically farmed and processed by Asnakech Thomas the only female coffee producer and exporter in Ethiopia. 80% of her employees are female. Amaro Gayo is a berry bomb. I was going over my cupping sheet that I used a few weeks ago and there is a big WOW! in the fragrance and aroma section. I remember when I broke the crust an amazing blueberry/cherry aroma drifted up and curled the hair in my nostrils. (it was a good thing). I loved this coffee. 5. KENYA/Tambaya PB- A peaberry (one whole single bean instead of two half’s) that I open had a very intense complex flavor with a nice balance. I only received a small consume when I cupped this coffee and roasted it very lighten as I always do when I cup. I’m really looking forward to try some different cook profiles and see what I can really bring out in this coffee.
